Split the lobster by inserting a knife into the cross between the head and body. Start with the head, then the body and tail. Clean and serve. Lobster's perfect preparation also makes it suitable for hot dishes. Heat the ½ lobster quickly on the grill or in the oven, season as required – and serve. TIP for Newfoundland hard-shell lobster 500-550 g & 550-650 g Lobster meat is easily separated from the shell into whole pieces , which can be used in many different ways. Shell parts can be used for stock – gives approx. 0.5 L concentrated stock per lobster. Homemade lobster bisque with lobster meat – 1 CRT is enough for 40 servings (1.5-2 dl lobster bisque & 20 g lobster, per serving).
